BBQ Chicken Soup

Ok this soup is amazing. I will tell you that.
Plus super easy and fun to make.
I had heard someone talking about this soup and looked up some recipes.
I wasn’t getting too excited from what I was seeing,
sooooo the new found non-recipe cook in me too charge.
After experimenting a little bit this soup is a keeper!
Case and point?
Hubster has eaten pretty much anything and everything.
He has never had anything like this and said this is a keeper!
How do I know he wasn’t lying?
He went back for seconds..and thirds. Good sign.
BBQ Chicken Soup
This is what you need:
cilantro, jalapeno, 6 garlic cloves, 1 white onion, canned corn with peppers,
can of kidney beans, 2 cups of chicken broth, 1/2 cup BBQ sauce,
2 cans (12.5oz) chicken breast meat, salt, pepper, garlic salt.

Chop the onions very finely. The smaller the better.

In a large pot, pour in some olive oil.
When it gets hot throw in the onions and cook for about 5 minutes.
I love the smell of onions cooking! So yum!!

While the onions cook have a chopping party with the
garlic, jalapeno, and cilantro.
Throw them in a mini chopper if you have one.

After the onions have cooked for a little bit throw in the
garlic, jalapeno, corn, beans and chicken.

Once everything has been together for 2-3 minutes add
the chicken broth, BBQ sauce and cilantro.
Couple notes: if you like it more soupy, just add more broth.
Lower the heat and let everything simmer together for 5 minutes.
Season the soup to your liking!

Because I am a carb freak and needed something besides soup,
I made cornbread muffins. Not from scratch….Jiffy.
That was always my favorite growing up!!

Pour your soup and sprinkle a little cheese on top if you want.
