Homemade Pesto

Jan 27th
One of my favorite things!
My craving for this delicious sauce/paste (depending how you make) has increased lately.
I love to put it on pasta, pizza, and even caprese (see here!)
Since I will be posting some more recipes with pesto thought I would share how I make.
This is super simple.
If you have a mini chopper or food processor that is the easiest way.
Of course a blender will make do too!
You will need: garlic, lemon, basil, pine nuts, olive oil, salt, and pepper.
First step is to pick your basil.
Make sure to not to have any stems!
Wash, wash, wash!!
All herbs are usually really dirty.

Peel 5-7 garlic cloves.
Throw them in the chopper.

Ahh, my best friend Mr. Chopper makes life so easy!

Once you have chopped garlic, set aside.
Next up to chop….the basil.

And then it is on to the pinenuts.
You can also use almonds, walnuts, and other nuts.

Combine basil, garlic, and pinenuts.
This will smell so good!
Pour in some olive oil. Start with 1/4 cup.
If you want more of a sauce keep add a little more.
I prefer a more paste texture.

Squeeze in half a lemon.
Watch out for the seeds getting in there!
Season with some salt and pepper to your liking.
You can always add more lemon if you would like.
