Spaghetti Bolognese

Feb 16th
Since I helped give a pasta recipe,
why not follow with a delicious homemade sauce.
Once I learned how to make a fresh sauce I haven’t gone back.
It is simple and tastes so much better.
Can be used for pasta, ziti, lasagna, or dipping garlic bread.
Whatever you decide, you will fall in LOVE.
You will need: one fine chopped onion, 6 cloves chopped garlic,
olive oil, chopped basil (good amount), parmesean cheese,
Italian sausage (spicy if you want), 3 cans crushed San Marzano tomatoes,
pepper, salt, and a 1/4-1/2 cup of red wine.

You first want to brown your sausage (use a little oil) in the saucepot.
Don’t cook all the way through…leave a little pink.
Set to side when done.

Next, cook your onions in the same pot as sausage.
The remnants from the sausage will add great flavor!!

Throw in your garlic.
Remember, not too soon….you don’t want bitter.

Add in the canned tomatoes and red wine.
This is a great time to add salt, pepper, garlic salt…any spices!
My motto is still the more spice the better.
Also throw in some parmesean cheese!!!
I don’t think it hurts to have a glass while cooking!?!
No harm done!!!
Final step of the sauce it to add chopped basil.
Let everything simmer on low for about 10-15 minutes.

Serve with a fresh batch of pasta!!!
