Crispy Beans

I have never been the biggest fan of green beans.
The only ones I love are Boston Market’s with mac & cheese.
(hmmmmm so good!)
The other night I decided to give in to cooking some beans.
We had a red pepper and a onion about to bad so I decided to use.
The original thought was to help “hide” the beans.
These turned out super yummy.
I will even make again.
So good I decided to even share!
You will need: Bag of green beans washed and ends cut,
a chopped white onion, chopped red bell pepper, pine nuts, & spices!
Get your chop on!!!
Chop the onion and red bell pepper.
In the meantime, bring a pot of water to boil.

Throw the onions, bell pepper, and pine nuts in a pan.
Use a little bit of olive oil….keep the veggies on low.

Once the water is boiling throw the beans in.
Only cook for a minute or so then drain.
Don’t rinse!

Your veggies amd nut mix are still just hanging out.
Add some spices here–salt, pepper, garlic salt, lemon pepper…
Then put then aside on a plate.

Throw the beans in a pan now!
High heat!
We are trying to get these guys crispy!!!

After a couple minutes, add the veggies & nuts back in.
Let them all cook together for a little bit.
These went great with salmon and rice.
