Barley Salad

For all my vegetarian friends out there….I haven’t forgotten about you!
This recipe was inspired by one of my favorite restaurants.
They serve a similar salad, but I changed it up a bit.
(ok…a lot!!!)
I like to make a big batch of this and have it for lunch during the week!
You can alter and add your favorite veggies if you like.
Feeling crazy? Add some chicken, tofu, or even salmon.
Options are endless!
You will need: one cucumber peeled and chopped, 3/4 red onion
chopped, one bell pepper chopped, 1 cup cooked barley,
1/2 head lettuce chopped, and some feta!!

Chop. Chop. and Chop.

Cook one cup of barley.
It doesn’t seem like a lot but TRUST me it is!

Throw all the veggies in a bowl.
(I put in tupperware container for the week)
Add some feta. My favorite is sundried tomato feta.

Now time to make the dressing.
If you are eating right away you can pour on.
Taking to work? I make a container of dressing.
I pour it on my salad before I go to work.
Olive oil, white vinegar, lemon pepper, garlic salt, and salt/pepper.
You will use about a 3/4 vinegar to 1/4 olive oil.
Play around with it!  

Let your barley cool before adding to the veggies.
(note–barley takes 45minutes to cook so plan that)
