Sundried Tomatoes and Broccoli

My favorite meal has always been chicken and broccoli.
Throw those two in anything and I am sold.
My least favorite things?
Tomatoes and spinach…
Well at least that was the case five years ago.
This was one of the first “expand your palate” dishes hubster made for me.
The goal was to get me to like new things but have my favorites around.
Now this is a staple in our house and my favorite pasta!!
Let me know how you like it!!
You will need: 1 box cooked pasta, 3 grilled chicken breasts,
3 bunches of broccoli, jar sundried tomatoes, 1 cup pine nuts,
1 diced white onion, 5 cloves of garlic chopped,
a good helping of spinach, olive oil, and parmesean cheese.
Start by browing your onion and garlic.
I am using my new skillet!!! (got on THIS roadtrip)

 

Steam some broccoli and make tender, then throw in with onions.
Easiest way to steam broccoli is throw in bowl, add some water,
cover with saran wrap and microwave.

 

Next add your grilled chicken.
Cook in a pan or on the bbq….either way is good.

 

Add your sundried tomatoes and season away!
Lemon pepper, garlic salt, oregano, salt, pepper….anything!

 

Add your pine nuts.
LOVE these…gives a yummy crunch!!
Don’t forget the spinach now!
Toss everything together with some parmesean cheese.
Add everything to a pasta of your liking.

Normally I do bowtie or penne, but I was feeling crazy!!

For my vegetarians friends this is great without chicken too!!
