Stuffed Peppers

This recipe came to me while driving home one night.

I spend my time driving, laying in bed at night, and other random moments

wondering what I am going to cook (and wear while doing).

Anyways, been trying to think of healthy & filling recipes.

These stuffed bell peppers I think make the cut!

The steps are simple!

I promise!!

The sauce can be put together in the morning, then stuff and bake when you get home.

You will need: Ground turkey, 2 carrots, 2 jalapenos, 4 bell peppers, 1 white onion

2 zucchini, mozzarella cheese, favorite pasta sauce, can of corn, garlic

Cut the tops off and cleaned the insides of the peppers out. Place in baking dish.


Chop all your veggies!!! (Take out jalapeno seeds if don't want spicy!)

Throw chopped veggies and corn into big skillet on med-high heat.

Add in the turkey meat. Go ahead and season a little bit---anything works!

Let everything cook together until turkey meat no longer pink.

Add your favorite pasta sauce (I chose basil). Let everything simmer on low for 10 minutes.

Scoop the saucy-goodness to the top of the peppers.

Throw some cheese on top. Why not!?!

Bake uncovered at 375 for about 30-40 minutes.
