Mexican Cheesy Casserole

Hello easy dinner!

Need a quick-prep dinner?

With cheese?

And chicken?

That is delicious and you will want seconds?

Well look no further!!

This recipe provided in another family cookbook by a friend is delicious!

When I first started cooking this was my “go-to”.

The steps are simple.

Best part?

Feeds a lot on a great budget!!!

Corn tortilla, jar of salsa, can of cream of chicken soup, shredded cheddar cheese, and canned chicken.

Your shopping list is simple and affordable!

Grab some black olives, sour cream, and an avocado for toppings!

 

Cut the tortilla into quarters and layer the bottom of a pan.

Combine the soup and salsa together in a bowl for your sauce.

Pour some sauce on top of the tortilla.

Add the canned chicken. (note--you can cook but canned saves time!)

Sprinkle some cheddar cheese!

Repeat the layers of tortilla, sauce, chicken, and cheese three more times.

Baked at 375 degrees covered in foil for about 30 minutes.

Uncover for the last 10 minutes or so.

Add toppings of your choice on top!!
