Lemon Sorbet

What’s not to love about lemon sorbet?
 
One of my favorite kitchen items is our ice cream maker.
 
I have enjoyed playing around making different types of treats (seen here too)
 
My pants have not enjoyed this.
 
Well I decided to make some lemon sorbet this past weekend.
 
It was supposed to be with Easter but I forgot to bring it.
 
Let’s just say hubster was happy I forgot.
 
Try this out and let me know what you think!
Simple Sugar.

Start by making some simple sugar.  Equal parts sugar and water. In my case I did 2 cups of sugar and 2 cups of water. Cook on medium heat until all the sugar has dissolved. Set aside to cool.

 

Lemon Zest.

 

Zest 4 lemons into a bowl.

Add sugar.

Combine 1 cup of sugar with the zest and mix around.

Combine sugar and zest.

 

Squeeze, Squeeze, Squeeze

Squeeze 3 cups of lemon juice. This was about 25-30 lemons for me.

It was quite the hand workout!!

Bowl O’ Juice

Combine the zest/sugar mix into the juice and wisk together!

Add the simple syrup to the bowl and wisk again.

Cover and chill in the refridgerator for about 3 hours.

 

Strain and Pour

Pour the mixture through a strainer into an ice cream maker.

Make sure the bowls are chilled!

Follow the instructions for your maker.

 

Pour & Chill

Once done in the ice cream maker pour into a container to freeze.

Leave in the freezer for at least an hour before you serve.
