In The Kitchen: Chipotle’s Corn Salsa

One of my absolute favorite vegetables is corn, which comes in a close second behind broccoli. I often find myself craving random corn dishes, whether it be grilled corn with cheese or sweet corn casserole. As the weather has been heating up we’ve been making more salsa and guacamole to go along with some afternoon margaritas. I decided I wanted to change it up and add something different when I thought about Chipotle. Please tell me you’ve been? Love!! Their corn salsa is what makes me crave going there. I closed my eyes and imagined myself eating a chicken bowl and thought of what goes in there. Well, born was this little creation. It’s not as good as Chipotle’s, but pretty close. We used this with chips, but I also found myself eating it out of the bowl with a spoon as a salad. From now on this will be served along with my other favorite Mexican food dips. Need: corn, red onions, cilantro, limes, jalapeno, salt & pepper

Dice your onion and throw in with the drained corn. 

Add in the diced jalapeno without the seeds. 

Add in some fresh cilantro. I like to chop it up a bit.

Squeeze in lots of fresh lime. The more the merrier. (I used 4)

Season with a good amount of salt and pepper.
Chill for a little bit prior to serving.
