In The Kitchen: Ice Cream Sandwich Cake

One of my favorite things about birthdays is the dessert that you will be entering your next year on. There’s some pretty big importance. I mean, you want to start off the next year with a bang right? Well, for hubster’s birthday this year he insisted he didn’t want any dessert. We’re trying this whole “eat healthy” thing which really causes quite the problems sometimes. Well, I decided that I don’t care what is happening, everyone needs a birthday surprise. Being also that it was a lazy Sunday and we were enjoying doing NOTHING, I didn’t want to make a mess in the kitchen and have to wash a bunch of dishes. (That was already done the night before with our pizza making date in which we made four different types of pizza…yes, for two people) So this brings us to the “easiest cake I have ever made”! I was inspired by this of course, but changed it up a little.

All you need:

-Mini ice cream sandwiches 

-Cool Whip

-Caramel sauce

-Favorite candy (I chose Butterfinger)

Simply line a baking pan with foil and layer with the ice cream sandwiches. Add a layer of Cool Whip using half of the tub. Dabble a little bit of carmel…ok add a lot. Crumble your favorite candy on top. Then repeat! Throw in the freezer until you are ready to serve. We let ours thaw about 3 minutes before diving in with a spoon….no plate needed.
