Cauliflower Mashed Potatoes

With the summer here to stay it’s time to watch what I eat.

We’re talking swimsuit season people!!

Little bikinis!!

Those two donuts after church are no longer an option.

During the week we try to think of healthy but filling dinners.

I’m not one for a little side salad at the end of the day.

So what do I do to get my carb fix rather than eating a whole baguette?

Cauliflower mashed potatoes!

These were made popular by the Atkins Diet and I love them!!

They taste so similar to regular potatoes and are much healthier!!

There are plenty of recipes online but this is how I like to make them.

It has taken a couple different experiments to figure it out.

Follow these easy steps and let me know what you think!!!

 

Start with a head of cauliflower.

Cut off the bottom and chop the cauliflower into pieces.

Steam the cauliflower for about 10 minutes or until soft.

Drain and make sure to get rid of all water.

Put the cauliflower in a food processor.

Add a scoop of butter. I use Smart Balance.

About a 1/4 cup of milk.

To make it thick I use a tablespoon of greek yogurt (healthy option)

You can use sour cream (husbter’s choice)

Add some garlic salt and pepper.

Blend away!!!
