Coconut-Pineapple Tilapia

Recently I have been having fun experimenting in the kitchen.

I try to make meals with whatever is left in my fridge.

So I had an onion, cans of pineapple, a red pepper and walnuts.

What should I do?

Since it was hot out I decided to make a crusted tilapia with a salsa.

This turned out so delicious and way better than I thought!

I’m not the biggest fish fan so I like how light the tilapia was.

The pineapple adds a fun sweet but the cilantro gives a great bite.

Start by getting the fish in the oven, then make the salsa.

This salsa is also great to have with chips….we tested it .

Start with two small cans of pineapple. Chop into smaller pieces.

Add one chopped red onion.

Throw in a chopped red bell pepper.

Nothing like a little cilantro! Finely chop a hefty amount.

I used about 1/2 cup of limeade to help mix it all together.

Onto the tilapia! Finely chop a cup of walnuts.

Add a cup of shaved coconut.

Beat two eggs. Dip the fish in the egg then nut mixture.

Bake for 20 minutes at 400 degrees.

Tada!!!! Fresh, light and delicious!
