Since I started learning to cook I have learned so much.
It’s been a lot of fun trying different recipes.
There’s been times when they don’t work out and other times they turn out great.
It’s all one big learning process.
Well I decided I wanted to make a roasted chicken for the first time.
Thank goodness (one) hubster was there to help…
and (two) my father-in-law was a phone call away to advise some cooking suggestions.
The chicken turned out super moist and the vegetables were delicious.
This was surprisingly easy to put together.
Plus while it cooked we took the dogs on a long walk!
I laughed when we were eating this while sweating since it was so hot out.
Not exactly a summer meal…more like winter….but it was so good!
Do you have any tips when it comes to making a roasted chicken?
We used: rosemary, lemons, garlic, onions, carrots, butternut squash, sweet potato,
a chicken, salt, pepper
Stuff your chicken with sliced onions, 2 lemon halfs and 4 cloves of garlic
Place in a roasting pan and drizzle with olive oil and sprinkle chopped rosemary
Throw in some sliced onion.
And chopped carrots.
A couple of garlic cloves never hurt.
And some chopped butternut squash and sweet potato.
Squeeze some lemon all over. Season with salt and pepper.
Bake at 400 degrees for 20 minutes, then 350 degrees for about an hour.

This looks SO good! And not very difficult either! I’m VEEERY challenged when it comes to cooking, but I feel like I could manage this recipe! Thanks for sharing love 🙂
