Mediterranean Skewers

When it comes to making appetizers sometimes I struggle.

I like to make something that’s quick and not going to fill people up too much.

While at work I was thinking about some caprese skewers and how cute those sounded.

When I got home I realized I had a lot more veggies I could add.

So born was a little Mediterranean Skewer.

It was light, easy to assemble and was quite the hit!

I used cherry tomatoes, one cucumer, two bell peppers, a jar of pitted Kalamata olive,

some basil and Mozzarella cheese. You will also need some wooden skewers.

Chop your veggies then layer everything onto the sticks.

I went with this order for make them full and colorful!

Inspired by my Aunt Cheri I sprinkled some spinach on the platter.

Makes it look a little pretty…she’s the QUEEN of doing this!

Added some olive oil and balsamic vinegar.

Add a little salt and pepper!

And voila…a light, simple and healthy appetizer!
