In The Kitchen: Grilled Watermelon Salad

When I think of my favorite memories of summer as a child annual watermelon seed fights always come to mine. Being my dad’s favorite fruit, watermelon is something that was always chopped up in a bowl in the fridge. As I now have my own kitchen I like to keep it around as a refreshing and sweet snack, especially on a warm summer’s day.

We felt like experimenting a bit and this recipe came about based on what we had in our fridge. A whole lot of mint and some feta left over from a salad. Grilling the watermelon gave it a little extra crunch, while the feta, mint, salt and balsamic proved to be a great combination of sweet and salty. I would recommend only chilling in the fridge for about 10 minutes after. We kept ours in a the fridge for a few hours and it was a little soggier than I had intended it to be. Our guests gave the creation the seal of approval!

And a fun little fact? No joke, while in the middle of making this we had an episode of ‘Chopped’ in the background and one of the chef’s was grilling his watermelon. We must be doing something right. Are you a fan of grilling your fruit?

We used a mini-watermelon and made slices. Then spray both sides with olive oil.

Sprinkle a little salt.

Fire up your grill and cook about 5-8 minutes on each side until grill marks.

Sprinkle your favorite balsamic on top, along with feta and mint.

Chill for 10 minutes then serve!
