In The Kitchen: Homemade Mint Chip

¬†One of my most favorite treats in the world is mint chocolate chip ice cream. I have such fond memories of when I was younger (ok I still go), going to Thrifty’s to get that icy rectangle scoop of mint chip in a cone. My in-laws know how much I love mint chip and put a recipe in our wedding cookbook for us! I changed a couple things after making it, one being a little less peppermint extract. We’ve enjoyed having this delicious treat in our fridge, especially on those warm summer nights.

Now since this is blog on the trials AND tribulations in the kitchen, I will share a little difficulty I had. I didn’t keep the mixture in my ice cream maker long enough….was kind of in a rush. When I poured the mix into tub to go in the freezer, all the chocolate chips sunk to the bottom because it wasn’t thick enough. Count on husband to fix it though! Prior to serving he took it out to soften and mixed it around. Quick fix huh?

If you have never made homemade ice cream this is a great recipe to start with! Everything just goes in the bowl. Some homemade ice cream requires boiling of different mixtures. Ingredients

2 cups milk

2 cups heavy cream

1 cup sugar

1/2 teaspoon salt

1 teaspoon vanilla extract

1 teaspoon peppermint extract

3 drops green food coloring

1 cup mini chocolate chips

Method

In a large bowl combine all the ingredients, except the chocolate chips.

Pour the mixture in your ice cream maker and follow the instructions.

Spoon the mixture into a container and freeze for two hours.
