In The Kitchen: Salmon Tacos

Truth be told, I am not a fan of fish at all. Never have been. However since I’ve gotten older (and married husband) it’s become something that I am trying to acquire a taste for. Plus, can we talk about the wonders omega does for your skin and body? In order to hide the taste of salmon I’ve been coming up with different recipes that have a lot of flavor, yet are healthy. So let me introduce you to my salon tacos.

This 15-minute meal for dinner is packed with flavor, light and super healthy. Win win for all right?



Iceberg Lettuce

1 Lemon


1 Avocado

Cheese of Choice

Salsa of Choice



Simply season your salmon and bake at 375 for 10 minutes. While the salmon is baking add a bell pepper and some pine nuts to a skillet. Cook on medium in a drizzle of olive oil. Add the salmon into the skillet to help make it crispy. Feel free to add more salt and pepper! Add the salmon to iceberg lettuce cups then top with cheese, avocado, salsa and cilantro. (I tried one with feta and one with shredded cheddar…both delicious!)

I season my salon with fresh lemon, salt, pepper, cilantro and lemon pepper.

Bake the salmon for 10 minutes at 375 degrees.

Add the salmon to a pan with bell peppers and pine nuts. Cook until crispy.

Prepare your lettuce cups.

Get your toppings ready.
