In The Kitchen: Stuffed Baked Potato

Lately I’ve had a couple people ask me to put up some recipes that require little to no cooking skills. Well, ask and you shall receive!

Two of my favorite foods are chicken and broccoli. If you’ve read the ‘About Me‘, you’ll know that it’s pretty much all I ate until I met hubs. I wasn’t really one to venture off and try new things, so every once in a while I like to take it back to the basics.

This stuffed potato combines all my favorites into one meal. It’s great for a filling dinner that doesn’t require any other sides. You can make it healthier by opting out on the cheese, or only having half, but that’s just kind of boring in my opinion. Go big or go home!

Wash, then oil and salt the outside of your potato. Baked at 400 for an hour.

In the meantime, season and cook some chicken breast in a skillet.

Slice open the potato and add some steamed broccoli.

Sprinkle your favorite cheese on top. Put back in the oven for 5-10 minutes until melted.
