As soon as the forecast shows chilly nights I run to the store to grab the essentials for tomato soup and grilled cheese. It’s a simple dinner to put together and then enjoy while snuggled in blankets and catching up on your favorite shows. I love making a creamy soup which is done by adding some heavy cream. This recipe doesn’t have butter (trying to be “healthy”) but simply throw in a half stick for some extra goodness. If spicy is to your liking toss in some crushed red pepper flakes. This soup will be made many times within the next couple months. If you’re having friends over keep this in mind as a simple “go-to”. Who can say no to this one, right?
Start by cooking 2 chopped onions, 3 chopped carrots, 3 chopped celery stalks in olive oil.
Add some salt, pepper and 8 sliced cloves of garlic.
Let the vegetables soften for about 10 minutes. Then add two cans of diced tomatoes.

Add in about two cups of chicken broth.
Throw in a cup of heavy cream.
A couple handfuls of chopped basil. This creates an amazing flavor.
If you have an immersion blender then the next part is easy. Simple blend away.
Ours was not working so I put the soup in a blender….a couple rounds.
Works just as well for the record!!!
While your soup is on a low simmer make your grilled cheese.
The secret? Butter both sides heavily!! I also like to use jack & cheddar mix.
