Parmesan Crusted Chicken

As mentioned previously, I made this chicken when I roasted the veggies. Great combo. his could also be a fun holiday recipe that is pretty simple and quick! 🙂

You will need: chicken breasts (not too thick/not too thin), bread crumbs, shredded Parmesan, eggs, milk, pepper, 4 Roma tomatoes, balsamic, basil.

Ok, for the chicken!!! In a bowl beat 2-3 eggs and add a little milk. In another bowl mix some bread crumbs and shredded Parmesan. Pepper the chicken on both sides. Dip in the egg mixture then in the cheese mixture. I found really patting the cheese onto the chicken helped keep it on better. In a large skillet heat some olive oil (should be enough to cover the whole pan.) Make sure it is really hot!!! Place the chicken in a brown on each side. **Make sure to watch because the cheese can burn**

For the topper. Wash and chop the tomatoes really small. Chop the basil as well. Mix both together with some salt, pepper, and balsamic. Place on top of the chicken when it is done. VOILA!!! Enjoy!!!
